Preparing food in Ayurveda (Āhāra Vidhi) is not just cooking—it is a complete science of health, digestion, and longevity.   
🌿 1. Importance of Food in Ayurveda
 – from Charaka Samhita
“आहारसम्भवं वस्तु रोगाश्चाहारसम्भवाः।”
Meaning:
Both the body and diseases arise from food...... 
 So food can be medicine or poison depending on how it is prepared and consumed.

🔹 (A) Use Fresh and Natural Ingredients

“नित्यं  हिताहारविहारसेवी…”
Meaning:
One who consumes wholesome food regularly maintains health.
...Practical Rules:
Use fresh grains, vegetables, fruits                                                   
AVOID:
Reheated food
Stored food (especially overnight)                           PREFER:
Seasonal produce (ऋतु आहार)
🔹 (B) Cooking Method Matters
 Śloka – Charaka Samhita Sutrasthana 27
“संस्कारो हि गुणान्तराधानम्”
Meaning:
Processing (cooking) changes the qualities of food.
GUIDELINES: 
Cook food properly (not raw, not overcooked)
Use:
Ghee (improves digestion)
Mild spices (jeera, ginger, turmeric)
Avoid:
Burnt food
Excess frying
🔹 (C) Six Tastes (Shad Rasa Balance)
“षड्रसं भुञ्जीत”
Meaning:
Food should include all six tastes.
 6 Tastes:
Sweet (Madhura)
Sour (Amla)
Salty (Lavana)
Pungent (Katu)
Bitter (Tikta)
Astringent (Kashaya)
 Balanced taste = balanced body (....Tridosha balance)                       
 EATING RULES: (Āhāra Vidhi Vidhan)

“उष्णं अश्नीयात्, स्निग्धं अश्नीयात्, मात्रावद् अश्नीयात्”
Meaning:
Eat warm food
Eat unctuous (slightly oily/ghee) food
Eat in proper quantity
 KEY RULES :
Eat only when hungry (Agni strong)
Do not overeat  (अतिमात्रा = disease cause)
Eat slowly and mindfully
Avoid talking, mobile, stress during meals
  IMPORTANT PRECAUTIONS : (Very Critical)                                ....(A) Viruddha Ahara (Incompatible Foods)
“विरुद्धाहार सेवनं रोगकारणम्”
Meaning:
Incompatible food combinations cause diseases.
Avoid combinations:
Milk + fish
Milk + sour fruits
Fruit + heavy meals
Honey + heat (never heat honey)

“अजीर्णे भोजनं विषम्”
Meaning:
Eating before previous food digests is like poison.
 AVOID :
Eating without hunger
Eating too fast/too slow
Emotional eating (anger, fear)

“शुचिः शुचौ देशे…”
Meaning:
Food should be prepared in a clean place with purity.
 Follow:
Clean kitchen
Calm mind while cooking
Positive thoughts (affects food energy)

Food that increases life, strength, health, and happiness is ideal.

Rice, wheat
Green gram (moong dal)
Cow ghee
Milk (properly taken)
Fresh fruits
Vegetables
