As per view of references we understand  many things of medicinal values  by history. Healthy herbs have long been held a holistic place in our wellbeing. Prized since ancient times, and today, depend upon them more than ever to purify our body, mind, and soul.we all use herbal parts in our daily lives, one way or the other, whether for their pleasant flavor, for their healing power, or in lovely recipes. Herbal benefits are many; be it for spiritual reasons or to spice up our taste buds, or as a home remedy for ailments like cold, or a sore throat; herbs can be handy for each one's need. As per reference ; Early documentation suggests that hunters and gatherers wrapped meat in the leaves of bushes, accidentally discovering that this process enhanced the taste of the meat, as did certain nuts, seeds, berries, and bark. Over the years, spices and herbs were used for medicinal purposes. Spices and herbs were also used as a way to mask unpleasant tastes and odors of food, and later, to keep food fresh . Ancient civilizations did not distinguish between  spices and herbs used for flavoring from those used for medicinal purposes. Records from that time also note that laborers who constructed the Great Pyramid of Cheops consumed onion and garlic as a means to promote health.               Anecdotal evidence suggests that Chinese courtiers in the 3rd century BC carried cloves in their mouths so their breath was sweet when addressing the emperor. During the 5th century, ginger plants were grown in pots and carried on long sea voyages between China and Southeast Asia to provide fresh food and to prevent scurvy.Spices and herbs (e.g., black pepper, cinnamon, turmeric, cardamom) have been used by Indians for thousands of years for both culinary and health purposes. Spices indigenous to India (e.g. cardamom and turmeric) were cultivated as early as the 8th century BC in the gardens of Babylon. 
Sushruta, an ancient great surgeon (around 4th century BC) used white mustard and other aromatic plants in bed sheets to ward off malignant diseases.
Although, the herbs been in use in our diet since antiquity, only recently they have taken the center-stage of nutrition scientific world for their potential health benefiting and detoxification properties. Herbs and spice, indeed, extend their flavor rather than substance to the food we eat.
  The use of mortar and pestle, pestling, offers the advantage that the substance is crushed with low energy so that the substance will not warm up.The green or fresh herbs give about 80% absorption in gut. So ancient were  well versed with biological science of humans. Some dry herbs were used because of its efficiency and special pharmacological effects.The herbal  effect of changes of biochemic activities or its metabolism and relative diseases control or cure.Still the after effects of natural herbal Ayurveda drugs not abled  to scientifically evaluate. Still a miraculous experience of getting cured by diseases,  as per Ayurveda principals.
Spices such as cardamom, ginger, black pepper, cumin, and mustard seed were included in ancient herbal medicines for different types of health benefits. Spices and herbs played an important role in ancient Greek medical science. Hippocrates , wrote about spices and herbs, including saffron, cinnamon, thyme, coriander, mint, and marjoram. He noted that great care should be given to the preparation of herbs for medical use.  400 herbal remedies utilized by Hippocrates.  Theophrastus sometimes called the "Father of Botany," wrote books that summarized the knowledge of over 600 spices and herbs. The Mohammedans were outstanding scientists for their time. They advanced the process of extracting flower scents from blossoms and herbs and created distillation techniques to distill essential oils from aromatic plants. Later around the 9th century, Arab physicians used spices and herbs to formulate syrups and flavoring extracts.In the early part of the middle ages, Asian Spices in Europe were costly and mainly used by the wealthy. A pound of saffron cost the same as a horse; a pound of ginger, as much as a sheep; 2 pounds of mace as much as a cow. A German price table  list a pound of nutmeg as worth 7 fat oxen.This indicate the value of herbs since the beginning 
Pepper, as well as other spices and herbs, was commonly used as a monetary source. Reference suggest, Eastern Europeans paid 10 pounds of pepper in order to gain access to trading with London merchants. Throughout Europe, peppercorns were accepted as a substitute for money (some landlords would get paid as a “peppercorn rent”. Peppercorns, counted out one by one, were accepted as currency to pay taxes, tolls, and rents, partly because of a coin shortage. Many European towns kept their accounts in pepper.Western medicine is rooted in plant based medicine. The United States used plants as the primary source of medicine from the time of the Mayflower(1620) until after World War I(1930) . Modern medicines, such as aspirin from the willow bark are rooted in plant based medicine. Although spices and herbs have been used since ancient times, they are playing a new and important  role in modern food preparation. They not only add unique flavors to our food, but contribute color and variety as well. Certain spices and herbs  used alone, or in blends, can replace or reduce salt and sugar in foods.
